Good Hand Hygiene

There are gargantuan signs in restrooms of all restaurants instructing the current occupant to WASH YOUR HANDS, usually in more than one language.

Is the sign just intended for the patrons? Are restaurant employees exempt?

The first line of defense against spreading heinous germs isn't high on the priority list of some restaurant employees.
